There is nothing quite like a big bowl of Zuppa Toscana on a chilly evening. It is the kind of meal that warms you up from the inside out, and it tastes even better the next day once the flavors have had time to blend together.

My favorite thing about this recipe is how simple it is to put together. Make sure you slice your potatoes to a consistent thickness so they all cook through at the same time without getting too mushy.

Ingredients

  • 1 pound spicy Italian sausage
  • 4 slices bacon, chopped
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 3 large russet potatoes, thinly sliced
  • 2 cups fresh kale, chopped and stems removed
  • 1 cup heavy cream
  • Salt and black pepper to taste
  • Red pepper flakes for serving

Instructions

    In a large pot over medium heat, cook the sausage until it is browned and crumbled. Remove the sausage and set it aside on a plate.
