There is nothing quite like a salmon bowl for a quick and satisfying dinner. These bites get perfectly crispy in the air fryer while staying nice and tender on the inside.

I love serving these over a bed of warm rice with plenty of fresh veggies. If you have any leftover salmon, it keeps well in the fridge for a day or two.

Ingredients

  • 1 pound salmon fillet, cut into 1 inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 cups cooked white or brown rice
  • 1 ripe avocado, sliced
  • 1 cup cucumber, sliced
  • 1/2 cup shredded carrots
  • 1/4 cup mayonnaise
  • 1 tablespoon sriracha
  • 1 teaspoon soy sauce
  • Sesame seeds for garnish

Instructions

    Preheat your air fryer to 400 degrees Fahrenheit.

    Toss the salmon cubes with olive oil, garlic powder, paprika, salt, and pepper in a medium bowl until well coated.

    Place the salmon in the air fryer basket in a single layer and cook for 7 to 8 minutes, shaking the basket halfway through until golden and crispy.

    Whisk together the mayonnaise, sriracha, and soy sauce in a small bowl to make the sauce.

    Divide the warm rice into bowls and top each with the crispy salmon, avocado, cucumber, and carrots.

To make this meal even faster, you can use leftover rice or pre cooked microwaveable rice. Keep the spicy mayo in a sealed jar in the fridge for up to one week if you have extra left over.
