There is something so comforting about a plate of crispy chicken tenders. These are a favorite in my house because they are lighter than the fried version but still give you that satisfying crunch we all crave.

My top tip is to make sure your breadcrumbs are nicely toasted before you begin. If you have extra time, let the breaded chicken sit on the rack for a few minutes before putting them in the oven to help the coating stay put.

Ingredients

  • 1 pound chicken breast tenders
  • 1 cup panko breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs, beaten
  • 1/4 cup all purpose flour
  • Cooking spray

Instructions

    Preheat your oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.

    Set up three shallow bowls for your breading station. Place the flour in the first bowl. In the second bowl, whisk the eggs. In the third bowl, stir together the panko, parmesan, garlic powder, paprika, salt, and pepper.

    Dredge each piece of chicken in the flour, shaking off the excess.

    Dip the floured chicken into the beaten eggs, then press it firmly into the panko mixture until well coated on all sides.

    Place the coated tenders on the prepared baking sheet in a single layer.

    Lightly spray the tops of the chicken with cooking spray to help them get golden brown.

    Bake for 15 to 20 minutes, flipping halfway through, until the chicken is cooked through and the breading is crunchy.

Serve these warm with a side of honey mustard or your favorite barbecue sauce. If you have leftovers, store them in an airtight container in the fridge for up to three days and reheat them in the oven to keep the crunch.
