This dish is a lovely way to brighten up your dinner rotation. The combination of crispy chicken and the cool, fresh toppings makes it feel special enough for guests but easy enough for a busy Tuesday.

My favorite thing about this meal is how well the textures work together. Make sure you use the freshest mozzarella you can find, as it really makes the flavor pop against the crispy breading.

Ingredients

  • 4 thin chicken cutlets
  • 1/2 cup all purpose flour
  • 2 large eggs, beaten
  • 3/4 cup panko breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 2 tablespoons olive oil
  • 8 ounces fresh mozzarella, sliced
  • 2 ripe tomatoes, sliced
  • 1/4 cup fresh basil leaves, torn
  • 2 tablespoons balsamic glaze

Instructions

    Set up three shallow bowls. Place the flour in the first, beaten eggs in the second, and a mixture of panko, parmesan, and Italian seasoning in the third.

    Pat the chicken dry and season lightly with salt and pepper. Dip each cutlet into the flour, then the eggs, and finally coat well with the panko mixture.

    Heat the olive oil in a large skillet over medium high heat. Cook the chicken for 3 to 4 minutes per side until golden brown and cooked through.

    Turn off the heat and top each piece of chicken with mozzarella slices and tomato slices. Cover the pan for a minute or two until the cheese starts to melt.
