There is something so satisfying about the crunch of a cinnamon sugar chip. They remind me of trips to the fair or fun afternoons in the kitchen when I was a kid. You only need a few simple ingredients to pull these together, and they always disappear in minutes.

My best tip is to watch the pan closely while they fry. Because they are thin, they turn golden brown very quickly. Once they start to get that nice color, pull them out right away so they stay perfectly crisp and not burnt.

Ingredients

  • 10 flour tortillas
  • 2 cups vegetable oil for frying
  • 1/2 cup granulated sugar
  • 2 tablespoons ground cinnamon

Instructions

    Mix the sugar and cinnamon together in a shallow bowl and set it aside.

    Cut each flour tortilla into eight even wedges using a sharp knife or a pizza cutter.

    Pour the oil into a large skillet until it is about one inch deep and heat it over medium high heat.

    Place a few tortilla wedges into the hot oil at a time, making sure not to overcrowd the pan.

    Fry the chips for about one minute on each side until they are golden brown and crispy.

    Remove the chips with a slotted spoon and let them drain on a paper towel for just a few seconds.

    While they are still warm, toss the chips in the cinnamon sugar mixture until they are well coated.

These are best enjoyed the same day they are made. If you have leftovers, keep them in an airtight container at room temperature for a day, but they will lose some of their crunch. They are delicious served with a side of fruit salsa or just plain as a snack.
