There is something so special about the contrast between golden coconut shrimp and fresh, crisp greens. The sweetness of the mango pairs perfectly with the citrus dressing to create a light yet satisfying dinner that your whole family will enjoy.

My biggest tip for this one is to keep an eye on your shrimp while they fry. Because the coconut is high in sugar, it can brown very quickly, so stay close to the stove and flip them as soon as they turn a beautiful golden color.

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup shredded sweetened coconut
  • 1/2 cup panko breadcrumbs
  • 1/4 cup all purpose flour
  • 2 large eggs, beaten
  • 4 cups mixed salad greens
  • 1 ripe mango, peeled and diced
  • 1/4 cup orange juice
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

    Whisk the orange juice, honey, lime juice, and olive oil together in a small bowl to make the dressing and set it aside.

    Set up three shallow bowls for dredging. Place the flour in the first bowl, the beaten eggs in the second, and a mixture of the shredded coconut and panko breadcrumbs in the third.

    Season the shrimp with a little salt and pepper. Dip each shrimp into the flour, then the egg, and finally press it firmly into the coconut mixture until well coated.
