There is nothing quite like a homemade fish sandwich to brighten up your lunch or dinner. I love how the buttery brioche buns contrast with the crispy, flaky fish and the smooth avocado slices.

This recipe is a favorite in my house because it comes together so quickly without needing any fancy equipment. If you want an extra crunch, try to get the fish fillets nice and golden brown in the pan.

Ingredients

  • 2 white fish fillets, such as cod or tilapia
  • 2 brioche buns
  • 1 ripe avocado, sliced
  • 1/4 cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon garlic powder
  • 2 tablespoons all purpose flour
  • 2 tablespoons butter or olive oil
  • Salt and pepper to taste

Instructions

  1. 1

In a small bowl, whisk together the mayonnaise, lemon juice, and garlic powder to create your tangy sauce.

  2. 2

Season the fish fillets on both sides with a pinch of salt and pepper, then lightly coat them in the flour.

  3. 3

Heat the butter or oil in a large skillet over medium heat.

  4. 4

Place the fish in the pan and cook for about 3 to 4 minutes per side until the fish is golden and flakes easily with a fork.

  5. 5

While the fish cooks, lightly toast your brioche buns in a separate pan or toaster.

  6. 6

Spread the lemon mayonnaise on both sides of the toasted buns.

  7. 7

Assemble the sandwiches by placing the cooked fish on the bottom bun, adding a layer of fresh avocado slices, and covering with the top bun.

๐Ÿ’ก Tips

You can store leftover sauce in an airtight container in the fridge for up to two days. If you like a little heat, add a pinch of red pepper flakes to the mayonnaise. Serve this sandwich alongside some oven baked potato wedges for a complete meal.
