There is something so comforting about crispy fish sticks, especially when you make them from scratch. Using fresh cod and panko breadcrumbs gives these a wonderful texture that stays crunchy even after baking.

My favorite trick for the best results is to pat the fish dry before you start. This helps the egg wash stick to the fish and keeps your breading from getting soggy while they cook.

Ingredients

  • 1 pound fresh cod fillets, cut into strips
  • 1/2 cup all purpose flour
  • 2 large eggs, lightly beaten
  • 1 1/2 cups panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray or a little olive oil

Instructions

    Preheat your oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.

    Set up a breading station with three shallow bowls. Put the flour in the first, the beaten eggs in the second, and the panko breadcrumbs mixed with the garlic powder, paprika, salt, and pepper in the third.

    Pat each cod strip dry with a paper towel. Dip each piece into the flour, then the egg, and finally press it firmly into the panko mixture until coated on all sides.

    Place the coated fish strips on your prepared baking sheet. Lightly spray the tops with cooking spray to help them get golden brown.

    Bake for about 15 to 18 minutes, flipping halfway through, until the fish is cooked through and the breading is nice and crispy.
