There is something truly special about the crunch of Korean fried chicken. It is famous for its light, shatteringly crisp crust that stays crunchy even after being tossed in a flavorful glaze.

My favorite thing about this dish is the sauce. It brings together garlic, ginger, soy sauce, and a touch of heat for a snack or dinner that everyone will ask for again. Make sure your oil is hot enough before you start frying so the crust gets nice and golden.

Ingredients

  • 2 pounds chicken wings or drumettes
  • 1 cup potato starch or cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil for frying
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons brown sugar
  • 2 tablespoons gochujang or Korean chili paste
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon rice vinegar
  • Sesame seeds for garnish
  • Sliced green onions for garnish

Instructions

  1. 1

Pat the chicken pieces dry with paper towels to ensure a crispy crust.

  2. 2

In a large bowl, toss the chicken with salt, pepper, and potato starch until every piece is well coated.

  3. 3

Heat about two inches of oil in a heavy pot to 350 degrees Fahrenheit.

  4. 4

Fry the chicken in batches for about 10 to 12 minutes until they are golden brown and cooked through, then remove them to a wire rack.

  5. 5

While the chicken rests, combine the soy sauce, honey, brown sugar, gochujang, garlic, ginger, and rice vinegar in a small saucepan over medium heat.

  6. 6

Simmer the sauce for about 5 minutes until it thickens slightly and looks glossy.

  7. 7

Toss the fried chicken in the sauce until fully coated, then sprinkle with sesame seeds and green onions before serving.

๐Ÿ’ก Tips

Serve this chicken immediately for the best crunch. If you have leftovers, keep them in the fridge and reheat in the oven instead of the microwave to help the crust stay crisp.
