Crispy Sheet Pan Baked Fish and Chips

My best tip for success is to make sure your potato wedges are cut into even sizes so they all cook through at the same time. If you want extra color on the fish, you can pop the broiler on for the final minute of cooking.
Ingredients
- 1.5 pounds russet potatoes, cut into wedges
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
- 1 pound cod fillets, patted dry
- 1 cup panko breadcrumbs
- 1/2 cup grated parmesan cheese
- 1 tablespoon fresh parsley, chopped
- 1 large egg, beaten

Preheat your oven to 425 degrees Fahrenheit and line a large baking sheet with parchment paper.

Toss the potato wedges with olive oil, garlic powder, paprika, salt, and pepper in a large bowl. Spread them in a single layer on the baking sheet and bake for 20 minutes.

While the potatoes bake, mix the panko breadcrumbs, parmesan cheese, and parsley in a shallow bowl.

Dip each piece of cod into the beaten egg, then press firmly into the breadcrumb mixture until coated.

Remove the pan from the oven, push the potatoes to one side, and place the fish fillets on the other side.

Bake for another 12 to 15 minutes or until the fish flakes easily with a fork and the potatoes are golden brown.

Serve these with a generous side of malt vinegar or your favorite tartar sauce. If you have any leftovers, store them in an airtight container in the fridge for up to two days and reheat in the oven to keep the crust crispy.
