Smash burger tacos have quickly become a favorite in my kitchen because they are so simple to pull together. You get that perfectly crispy, golden crust on the beef that we all love in a good burger, paired with melty cheese and your favorite toppings.

My best tip is to use a very hot skillet and press the meat down firmly with a spatula. Getting the beef paper thin is the secret to making sure the edges get nice and crunchy before the tortilla is toasted.

Ingredients

  • 1 pound ground beef
  • 8 small flour tortillas
  • 8 slices American cheese
  • 1 cup shredded lettuce
  • 1/2 cup diced white onion
  • 1/2 cup pickles
  • 1/4 cup burger sauce or mayonnaise
  • Salt and pepper to taste
  • 1 tablespoon oil

Instructions

    Divide the ground beef into eight equal portions and roll them into small balls.

    Place a flour tortilla on your cutting board and press one ball of beef onto the center of the tortilla until it spreads out to the edges in a very thin layer.

    Season the beef side with a little salt and pepper.

    Heat a large skillet or griddle over medium high heat with a tiny bit of oil.

    Place the taco beef side down into the hot pan and cook for about 2 to 3 minutes until the meat is browned and crispy.

    Flip the taco over, place a slice of cheese on the beef, and cook for another minute until the tortilla is golden and the cheese is melted.

    Remove from the pan and repeat with the remaining tacos.

    Top each taco with shredded lettuce, diced onions, pickles, and a drizzle of burger sauce before serving.

These are best served immediately while the tortillas are crispy and the cheese is hot. If you have leftovers, keep the meat and tortillas separate from the cold toppings so the shells do not get soggy in the fridge.
