This Crockpot Marry Me Chicken is a favorite in my house because it is so incredibly easy to pull together. The slow cooker does all the hard work while the chicken becomes tender and the sauce gets perfectly creamy.

I love serving this over a big bowl of pasta to soak up all that delicious Parmesan and sun dried tomato sauce. If you want to keep things lighter, it is also wonderful served with steamed broccoli or roasted potatoes.

Ingredients

  • 1.5 pounds chicken breasts
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon red pepper flakes
  • Salt and black pepper to taste
  • 1/2 cup sun dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped

Instructions

    Place the chicken breasts at the bottom of your slow cooker.

    Season the chicken with the oregano, garlic powder, red pepper flakes, salt, and pepper.

    Add the chopped sun dried tomatoes and minced garlic on top of the chicken.

    Pour the chicken broth and heavy cream over the chicken.

    Cover and cook on low for 4 hours or on high for 2 hours until the chicken is cooked through.

    Remove the chicken and shred it with two forks before returning it to the pot.

    Stir in the Parmesan cheese until the sauce is creamy and smooth.

    Serve warm with a garnish of fresh parsley.

Store any leftovers in an airtight container in the fridge for up to three days. You can reheat this gently on the stove with a splash of extra broth if the sauce gets too thick.
