There is something so comforting about coming home to the smell of a hearty soup waiting for you. This recipe takes everything you love about stuffed peppers, like savory meat, tender rice, and sweet bell peppers, and turns it into a warm bowl of goodness.

My favorite thing about this meal is how simple it is to put together on a busy day. Just toss everything into the crockpot and let it do the hard work for you. It is a fantastic way to feed a hungry family without spending all night in the kitchen.

Ingredients

  • 1 pound Italian sausage
  • 1 onion, diced
  • 3 bell peppers, chopped
  • 28 ounces crushed tomatoes
  • 14 ounces diced tomatoes
  • 4 cups beef broth
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 cup uncooked white rice
  • Salt and pepper to taste

Instructions

    Brown the Italian sausage and the diced onion in a skillet over medium heat until the meat is fully cooked.

    Drain any excess grease from the skillet.

    Add the cooked sausage mixture along with the bell peppers, crushed tomatoes, diced tomatoes, beef broth, garlic, and oregano into your slow cooker.

    Stir everything well and cover with the lid.

    Cook on low for 6 to 8 hours or on high for 3 to 4 hours.

    Stir in the uncooked white rice about 45 minutes before you are ready to serve to ensure it cooks perfectly in the broth.

Leftovers store beautifully in an airtight container in the fridge for up to three days. If the soup gets too thick while sitting in the fridge, simply add a splash of extra beef broth when reheating it on the stove. I love serving this with a side of crusty bread for dipping.
