This bread is a favorite in my house because it is so incredibly chocolatey. You get a deep flavor from the cocoa powder and little pockets of sweetness from the chocolate chips, so nobody will ever guess there is a whole cup of zucchini hidden inside.

It is very easy to mix up by hand in just one bowl. Be sure to squeeze the extra moisture out of your grated zucchini before adding it to the batter so your loaf stays perfectly tender instead of soggy.

Ingredients

  • 1 and 1/2 cups all purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup finely grated zucchini, squeezed dry
  • 1/2 cup semisweet chocolate chips

Instructions

    Preheat your oven to 350 degrees Fahrenheit and grease a standard loaf pan.

    In a large bowl, whisk together the flour, cocoa powder, baking soda, and salt.

    In a separate small bowl, mix the oil, sugar, egg, and vanilla until smooth.

    Pour the wet ingredients into the dry ingredients and stir gently until just combined.

    Fold in the grated zucchini and the chocolate chips.

    Pour the batter into your prepared pan and smooth the top.

    Bake for 50 to 55 minutes or until a toothpick inserted into the center comes out clean.
