There is nothing quite like the smell of fresh banana bread wafting through the kitchen. This recipe has become a staple in my house because it is so quick and uses simple pantry items that you likely have on hand right now.

Using the air fryer is a wonderful trick for smaller batches. It produces a tender, golden loaf without needing to heat up your whole kitchen, making it perfect for a cozy morning treat or a quick snack.

Ingredients

  • 2 large ripe bananas, mashed
  • 1/3 cup melted butter or coconut oil
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch of salt
  • 1 1/2 cups all purpose flour

Instructions

  1. 1

Grease a small loaf pan that fits inside your air fryer basket.

  2. 2

In a large bowl, whisk together the mashed bananas, melted butter, sugar, egg, and vanilla until smooth.

  3. 3

Stir in the baking soda, salt, and flour until just combined, being careful not to overmix the batter.

  4. 4

Pour the batter into your prepared loaf pan and smooth the top with a spoon.

  5. 5

Place the pan into the air fryer basket and bake at 320 degrees Fahrenheit for about 30 to 35 minutes.

  6. 6

Check the bread by inserting a toothpick into the center. If it comes out clean, the bread is ready.

  7. 7

Let the bread cool in the pan for 10 minutes before moving it to a wire rack.

๐Ÿ’ก Tips

Store your leftover slices in an airtight container at room temperature for up to three days. You can also toast a slice in the air fryer for a minute to get those crispy edges back. This recipe freezes beautifully, so feel free to wrap individual slices for an easy grab and go breakfast.
