Baked Caprese Chicken is one of those meals I turn to when I want something that tastes fancy but requires very little effort. It brings together all the classic flavors of a summer salad in a warm, comforting dish that works perfectly for a quick weeknight dinner.

The secret to getting that perfect flavor is using fresh basil and a good quality balsamic glaze. If you have extra time, letting the chicken marinate in a little olive oil and Italian seasoning before baking adds an extra layer of flavor to the meat.

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper to taste
  • 2 large tomatoes, sliced
  • 8 ounces fresh mozzarella, sliced
  • 1/4 cup fresh basil leaves, chopped
  • 3 tablespoons balsamic glaze
