This dinner is a favorite in my house because it is so easy to put together on a busy weeknight. You just toss everything onto one tray, and the oven does all the heavy lifting for you while you relax.

My top tip is to make sure your potato slices are about the same thickness so they all cook through at the same time. This keeps everything tender and perfectly seasoned with the garlic and herbs.

Ingredients

  • 4 chicken thighs with skin on
  • 1 pound baby potatoes, halved
  • 2 medium zucchini, sliced into rounds
  • 1 pint cherry tomatoes
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, sliced into rounds

Instructions

    Preheat your oven to 400 degrees Fahrenheit.

    Place the potatoes, zucchini, and cherry tomatoes on a large rimmed baking sheet.

    Drizzle the vegetables with half of the olive oil, then sprinkle with half of the minced garlic, thyme, salt, and pepper.

    Toss the vegetables to coat them evenly and spread them out in an even layer.

    Rub the chicken thighs with the remaining olive oil, garlic, thyme, salt, and pepper.

    Nestle the chicken thighs among the vegetables and place the lemon slices on top of the chicken and veggies.

    Bake for 35 to 40 minutes, or until the chicken skin is golden brown and the potatoes are soft when poked with a fork.

    Let the tray rest for 5 minutes before serving to let the juices settle.

Store any leftovers in an airtight container in the fridge for up to three days. This dish is great served as is, but it also goes nicely with a side of crusty bread to soak up the juices from the pan.
