There is something so special about the smell of peaches baking in the oven. This crisp is one of my favorite ways to celebrate peach season because it tastes like a treat but is light enough to enjoy any time of day.

I love serving this warm with a little yogurt or milk, especially if you are having it for breakfast. If you have extra fresh peaches on hand, this is the perfect way to use them up before they get too soft.

Ingredients

  • 4 cups fresh peaches, sliced
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/3 cup sliced roasted almonds
  • 1/4 cup maple syrup
  • 3 tablespoons melted coconut oil
  • 1/2 teaspoon ground cinnamon

Instructions

    Preheat your oven to 350 degrees Fahrenheit and lightly grease a small baking dish.

    In a mixing bowl, toss the sliced peaches with the lemon juice and vanilla extract until well coated.

    Transfer the peaches into your prepared baking dish.

    In a separate bowl, combine the oats, almond flour, sliced almonds, maple syrup, coconut oil, and cinnamon.
