Stuffed zucchini is a staple in my kitchen when the garden is overflowing with squash. It is such a clever way to turn a vegetable into a main dish that feels filling and satisfying without being too heavy.

My favorite thing about this recipe is how versatile it is. You can swap the ground meat for cooked lentils or chickpeas if you want to keep it vegetarian, or add extra cheese if you are feeling a bit indulgent.

Ingredients

  • 4 medium zucchini
  • 1 pound ground beef or turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can tomato sauce
  • 1 teaspoon dried oregano
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

    Preheat your oven to 375 degrees Fahrenheit.

    Slice the zucchini in half lengthwise and use a spoon to scoop out the seeds, creating a hollow boat shape.
