There is nothing better than a quick marinade that adds a ton of flavor without much effort. This balsamic blend is one of my favorite go to recipes because the vinegar tenderizes the meat while the garlic and Dijon mustard create a tangy finish everyone enjoys.

This recipe works great on the grill but you can also cook it in a skillet on the stove. Just remember to discard any extra marinade that touched the raw chicken before you start cooking to keep everything safe and delicious.

Ingredients

  • 1/3 cup balsamic vinegar
  • 1/4 cup olive oil
  • 2 tablespoons Dijon mustard
  • 3 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 chicken breasts

Instructions

    Whisk the balsamic vinegar, olive oil, Dijon mustard, minced garlic, lemon juice, oregano, salt, and pepper together in a medium bowl.

    Place your chicken breasts in a large sealable bag or a glass dish and pour the marinade over them.

    Seal the bag or cover the dish and let the chicken sit in the fridge for at least 30 minutes, though a few hours is even better.

    Remove the chicken from the marinade and discard the leftover liquid.

    Grill the chicken over medium heat for about 6 to 8 minutes per side, or until it is cooked through and reaches an internal temperature of 165 degrees.

Serve this chicken over a bed of fresh greens or with roasted vegetables. Store any leftovers in an airtight container in the fridge for up to three days. You can also use this same marinade on chicken thighs if you prefer darker meat.
