Easy Banana Zucchini Muffins
These tender muffins are a perfect way to use up your garden zucchini and ripe bananas.
dailyrecipesbook.comThere is something so comforting about a fresh batch of muffins coming out of the oven. These are a personal favorite in my house because they are moist, sweet, and a little bit healthier thanks to the addition of shredded zucchini and hearty oats.
My best tip for success is to make sure you squeeze as much moisture as you can out of your grated zucchini. This keeps the muffins from getting too soggy and ensures a perfect crumb every time you bake them.
