There is something so comforting about a warm, roasted sweet potato topped with savory BBQ chicken. It is a perfect weeknight meal because it uses rotisserie chicken to save you a lot of time in the kitchen.

My favorite thing about this dish is how the sweetness of the potato balances out the tangy BBQ sauce. Feel free to add a little extra spice if your family enjoys a bit of heat with their dinner.

Ingredients

  • 4 medium sweet potatoes
  • 2 cups shredded rotisserie chicken
  • 1 cup BBQ sauce
  • 1 ripe avocado, sliced
  • 1/4 cup pickled red onions
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit.

  2. 2

Scrub the sweet potatoes clean and pat them dry.

  3. 3

Rub the potatoes with olive oil and poke them a few times with a fork.

  4. 4

Place the potatoes on a baking sheet and bake for 45 to 60 minutes until they are soft and tender.

  5. 5

While the potatoes bake, mix the shredded chicken and BBQ sauce in a small saucepan over medium heat until warmed through.

  6. 6

Once the potatoes are done, slice them open down the center and fluff the inside with a fork.

  7. 7

Spoon the BBQ chicken mixture into each potato.

  8. 8

Top with avocado slices, pickled red onions, and fresh cilantro before serving.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to three days. If you want to make this ahead of time, bake the potatoes and shred the chicken earlier in the day to make assembly quick at dinnertime.
