There is something so satisfying about a big bowl of taco salad. It is the perfect way to enjoy all the flavors of a taco without the mess, and it makes for a fantastic quick dinner on busy weeknights.

My favorite part about this dish is the crunch from the tortilla strips against the creamy dressing. If you like a little extra heat, feel free to toss in some sliced jalapeΓ±os or extra chili powder in the meat mixture.

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can black beans, rinsed and drained
  • 1 head romaine lettuce, chopped
  • 1 cup shredded sharp cheddar cheese
  • 2 large tomatoes, diced
  • 1/2 red onion, finely diced
  • 1 cup crispy tortilla strips
  • 1/2 cup sour cream
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder

Instructions

  1. 1

Brown the ground beef in a large skillet over medium heat until fully cooked, then drain any excess fat.

  2. 2

Add the taco seasoning and a splash of water to the beef, stirring well to coat the meat, and simmer for five minutes before removing from heat.

  3. 3

Whisk together the sour cream, lime juice, and chili powder in a small bowl to create your dressing.

  4. 4

In a large serving bowl, combine the chopped lettuce, cooked beef, black beans, diced tomatoes, onion, and shredded cheese.

  5. 5

Drizzle the creamy dressing over the salad and toss everything together until well combined.

  6. 6

Top with the crispy tortilla strips right before serving so they stay nice and crunchy.

πŸ’‘ Tips

If you are planning to have leftovers, store the salad and dressing in separate containers to keep the lettuce crisp. You can also add sliced avocado or cilantro on top for a little extra freshness.
