Beef kofta is one of my favorite meals to make when I want something flavorful but simple. The mix of fresh parsley, onion, and warm spices gives the meat such a lovely depth, and they always turn out juicy and delicious.

I find these are perfect for a busy weeknight because they cook up quickly. My favorite tip is to let the mixture rest in the fridge for a few minutes before shaping, as it helps the spices soak into the meat for a better result.

Ingredients

  • 1 pound ground beef
  • 1 small onion, finely grated
  • 1/4 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

    In a large bowl, combine the ground beef, grated onion, chopped parsley, minced garlic, cumin, coriander, cinnamon, salt, and pepper.

    Mix everything together with your hands until well combined but be careful not to overwork the meat.

    Shape the mixture into small oval meatballs or logs.

    Heat the olive oil in a large skillet over medium heat.

    Add the meatballs to the pan and cook for about 8 to 10 minutes, turning them occasionally, until they are browned and cooked through.

Serve these meatballs in warm pita bread with a dollop of yogurt sauce and some fresh cucumber slices. You can store any leftovers in an airtight container in the fridge for up to three days.
