This black pepper chicken is my favorite solution for those busy weeknights when you want something flavorful but fast. It relies on a simple sauce that coats the chicken beautifully and provides that classic heat everyone loves.

My top tip for this dish is to have all your ingredients chopped and ready by the stove before you turn on the heat. Stir frying happens very quickly, so having everything organized makes the whole process much more enjoyable.

Ingredients

  • 1 pound boneless skinless chicken thighs, cut into bite sized pieces
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped into chunks
  • 1 red bell pepper, chopped into chunks
  • 2 teaspoons freshly cracked black pepper
  • 3 cloves garlic, minced
  • 2 tablespoons oyster sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon water

Instructions

    In a medium bowl, toss the chicken with one tablespoon of soy sauce and the cornstarch until well coated.

    Heat the oil in a large skillet or wok over medium high heat.

    Add the chicken to the pan and cook until it is golden brown and cooked through, then remove it from the pan and set aside.

    In the same pan, add the onion and bell pepper. Stir fry for about three minutes until they are tender yet still crisp.

    Stir in the garlic and black pepper, cooking for another minute until fragrant.

    Return the chicken to the pan and pour in the oyster sauce, the remaining tablespoon of soy sauce, and the water.

    Toss everything together for one or two minutes until the sauce has thickened and coats the chicken and vegetables evenly. Serve immediately.

This dish is wonderful served over steamed jasmine rice or plain noodles. If you have leftovers, keep them in an airtight container in the fridge for up to three days and reheat them gently in a pan.
