Carne asada is one of those meals that brings everyone to the table. Cooking it on a Blackstone griddle gives the steak a beautiful crust while keeping the inside tender and juicy. It is a favorite at our house because it is fast and goes perfectly with warm tortillas.

My best tip for success is to slice the meat against the grain once it finishes cooking. This ensures every bite is as tender as possible for your tacos or burritos.

Ingredients

  • 2 pounds flank steak
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup lime juice
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. 1

Whisk the olive oil, garlic, cilantro, lime juice, chili powder, cumin, salt, and pepper in a bowl to create the marinade.

  2. 2

Place the steak in a large bag or dish and pour the marinade over it. Let it rest in the fridge for at least two hours.

  3. 3

Preheat your Blackstone griddle to medium high heat.

  4. 4

Remove the steak from the marinade and place it directly onto the hot griddle.

  5. 5

Sear the steak for about 5 to 7 minutes per side until it reaches your preferred level of doneness.

  6. 6

Remove the steak from the griddle and let it rest on a cutting board for 10 minutes before slicing thinly against the grain.

๐Ÿ’ก Tips

Serve your steak with warm flour tortillas, fresh salsa, and avocado slices for a complete meal. You can keep leftovers in an airtight container in the fridge for up to three days.
