These scones have become a household favorite because they turn out perfectly tender every single time. Using almond flour gives them a wonderful texture that feels light but satisfying. They are quick to prepare and come together with simple ingredients you might already have in your pantry.

I love adding fresh blueberries and a bit of lemon zest to brighten the flavor. If you want that bakery style finish, just add a light sprinkle of raw sugar on top before they go into the oven. They are best enjoyed warm with a cup of tea or coffee.

Ingredients

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/3 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup cold butter, cut into small cubes
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1/2 cup fresh blueberries
  • 1 tablespoon raw sugar for topping

Instructions

  1. 1

Preheat your oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.

  2. 2

In a large bowl, whisk together the almond flour, coconut flour, sugar, baking powder, and salt.

  3. 3

Add the cold butter cubes to the dry ingredients. Use a pastry cutter or your fingers to work the butter in until the mixture looks like coarse crumbs.

  4. 4

In a separate small bowl, whisk the egg with the vanilla extract and lemon zest.

  5. 5

Pour the wet ingredients into the dry mixture and stir until a dough begins to form.

  6. 6

Gently fold in the fresh blueberries being careful not to crush them.

  7. 7

Form the dough into a disk on your parchment lined baking sheet and cut it into eight wedges.

  8. 8

Space the wedges out slightly on the pan and sprinkle the tops with the raw sugar.

  9. 9

Bake for 15 to 20 minutes until the edges are golden brown.

  10. 10

Let them cool on the pan for about 10 minutes before serving.

๐Ÿ’ก Tips

Store any leftovers in an airtight container at room temperature for up to two days. If you prefer, you can keep them in the fridge to help them stay fresh longer. Warm them up in a toaster oven for a few minutes to bring back that delightful crispy edge.
