There is something so comforting about the smell of fresh muffins baking in the oven. I love making these whenever my bananas get a little too spotty on the counter, as the natural sweetness makes the muffins taste so much better.

My biggest tip is to make sure your butter is softened to room temperature before you start. It helps everything blend together into a smooth batter, which keeps the muffins light and fluffy.

Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1/2 cup sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch of salt
  • 1 1/2 cups all purpose flour
  • 1 cup fresh or frozen blueberries

Instructions

  1. 1

Preheat your oven to 350 degrees Fahrenheit and grease a muffin tin or use paper liners.

  2. 2

In a large bowl, mix the mashed bananas with the melted butter.

  3. 3

Stir in the sugar, egg, and vanilla extract until well combined.

  4. 4

Sprinkle the baking soda and salt over the mixture and stir them in.

  5. 5

Gently fold in the flour until just combined, being careful not to overmix the batter.

  6. 6

Fold in the blueberries, then divide the batter evenly into your muffin tin.

  7. 7

Bake for 20 to 25 minutes or until a toothpick inserted into the center comes out clean.

  8. 8

Let the muffins cool in the pan for a few minutes before moving them to a wire rack.

๐Ÿ’ก Tips

These muffins stay fresh for up to three days in an airtight container at room temperature. You can also freeze them for up to two months and pop them in the microwave for a quick breakfast on busy mornings.
