Easy Blueberry Cobbler with Almond Topping
This wonderful cobbler features sweet, jammy blueberries topped with a crisp and buttery almond biscuit crust.
dailyrecipesbook.comThere is nothing quite like a warm blueberry cobbler during the summer months. The berries get nice and juicy in the oven, while the almond flour topping creates a beautiful texture that is tender on the inside and perfectly crispy on the edges.
I find that this dish is best served while it is still slightly warm from the oven. If you have some leftover berries, this is the perfect way to use them up for a crowd pleasing dessert that everyone will enjoy.
Ingredients
- 4 cups fresh blueberries
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 cup almond flour
- 1/2 cup all purpose flour
- 1/4 cup sugar
- 1 teaspoon baking powder
- 1/4 cup cold unsalted butter, cubed
- 1/3 cup milk
Instructions
- 1
Preheat your oven to 375 degrees Fahrenheit.
- 2
In a medium bowl, toss the blueberries with the sugar, lemon juice, and lemon zest. Pour this mixture into a greased baking dish.
- 3
In a separate large bowl, whisk together the almond flour, all purpose flour, sugar, and baking powder.
- 4
Add the cold butter cubes to the flour mixture. Use a pastry cutter or your fingers to rub the butter in until you have coarse crumbs.
- 5
Stir in the milk until just combined to form a soft dough.
- 6
Drop spoonfuls of the dough over the blueberries in the baking dish. You do not need to cover them completely.
- 7
Bake for 30 to 35 minutes until the topping is golden brown and the blueberry filling is bubbling.
- 8
Let the cobbler cool for about 10 minutes before serving.
๐ก Tips
Serve this warm with a scoop of vanilla bean ice cream. You can store any leftovers in the refrigerator for up to three days, just reheat them gently in the oven to get the topping crispy again.
