Easy Bruschetta Chicken

I love this recipe because it brings fresh summer flavors to the table without needing to turn on the oven. The combination of garlic, fresh basil, and balsamic vinegar over the melted cheese is absolutely delicious and brings such a nice, bright finish to the savory chicken.
Ingredients
- 4 Roma tomatoes, diced
- 3 cloves garlic, minced
- 2 tablespoons red onion, finely diced
- 2 tablespoons fresh basil, thinly sliced
- 2 tablespoons olive oil, divided
- 1 tablespoon balsamic vinegar
- 1/2 teaspoon granulated sugar
- 1 1/4 teaspoons salt, divided
- 3/4 teaspoon black pepper, divided
- 1 pound boneless skinless chicken breasts, sliced in half horizontally
- 1 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- 1/2 cup shredded mozzarella cheese
- 1 tablespoon balsamic glaze
Instructions

In a medium bowl, combine the diced tomatoes, minced garlic, red onion, and fresh basil.

Add 1 tablespoon of olive oil, balsamic vinegar, sugar, 1/4 teaspoon salt, and 1/4 teaspoon black pepper to the bowl. Mix everything well and set it aside so the flavors can get to know each other.

Pat the chicken cutlets dry with paper towels. Season both sides of the chicken with the garlic powder, Italian seasoning, the remaining salt, and the remaining pepper.

Heat the remaining tablespoon of olive oil in a large skillet over medium high heat. Once the oil is shimmering, add the chicken to the pan in a single layer.

Cook the chicken for 3 to 5 minutes per side until it is golden brown and the internal temperature reaches 165 degrees Fahrenheit.

Turn the heat down to low and sprinkle the shredded mozzarella evenly over each piece of chicken. Cover the skillet with a lid for about 1 minute or until the cheese has melted.

Remove the pan from the heat and top each piece of chicken with the tomato mixture. Drizzle with the balsamic glaze just before serving.

Store any leftover chicken and the tomato mixture in separate airtight containers in the fridge for up to three days. When you are ready to eat, reheat the chicken gently in a skillet before adding the fresh tomato topping. For the best flavor, use the freshest tomatoes and basil you can find.
