Buckeye graham crackers are a total favorite in my kitchen whenever I need something sweet in a hurry. They take that iconic peanut butter and chocolate flavor we all love and put it on a crunchy cracker base that is so fun to eat.

My best tip for these is to let the chocolate set completely on a piece of wax paper before you try to store them. This keeps the coating looking perfect and prevents any mess in your treat jar.

Ingredients

  • 8 whole graham cracker sheets
  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups semi sweet chocolate chips
  • 2 tablespoons coconut oil

Instructions

    Break each graham cracker sheet into four smaller squares and set them aside on a large tray.

    In a mixing bowl, beat the peanut butter and softened butter together until smooth.

    Slowly mix in the powdered sugar and vanilla extract until you have a thick, creamy filling.

    Spread a generous spoonful of the peanut butter mixture onto each graham cracker square, leaving a little bit of the edges showing.

    Place the tray of crackers in the freezer for about 20 minutes to firm up.

    Melt the chocolate chips and coconut oil together in a microwave safe bowl, heating in 30 second intervals and stirring until smooth.
