These Buffalo Chicken Bowls are one of my favorite quick meals when I want something packed with flavor but still wholesome. They are super easy to put together and perfect for busy weeknights because you can customize the toppings to whatever you have in your fridge.

I love the balance between the spicy buffalo sauce and the cool, creamy dressing on top. A quick tip is to shred your chicken while it is still warm so it absorbs all that tangy sauce before you assemble your bowls.

Ingredients

  • 2 cups shredded cooked chicken
  • 1/2 cup buffalo wing sauce
  • 2 cups cooked quinoa or brown rice
  • 1 cup shredded carrots
  • 1 cup chopped celery
  • 1/2 cup pickled red onions
  • 1/4 cup crumbled blue cheese or feta
  • 1/4 cup ranch or blue cheese dressing
  • 2 tablespoons chopped fresh parsley

Instructions

    Place the shredded chicken in a medium bowl and toss it with the buffalo sauce until every piece is well coated.
