Easy Cherry Tiramisu
This lovely no bake dessert combines juicy fresh cherries with a creamy mascarpone filling and classic ladyfingers.

This cherry tiramisu is a favorite in my house because it is cool, creamy, and highlights the beautiful flavor of fresh summer cherries without needing to turn on the oven.
My best advice is to let this sit in the fridge for at least six hours before you plan to serve it. This allows the cookies to soak up all that wonderful cherry syrup and makes the texture perfectly soft and spoonable.
Ingredients
- 2 cups fresh cherries, pitted and halved
- 1/2 cup granulated sugar
- 1/4 cup water
- 16 ounces mascarpone cheese, softened
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 24 ladyfinger cookies
- Fresh cherries for garnish

Combine the pitted cherries, granulated sugar, and water in a small saucepan over medium heat.

Simmer the mixture for about 10 minutes until the cherries soften and the liquid thickens into a syrup, then set it aside to cool completely.

In a large bowl, beat the heavy whipping cream, powdered sugar, and vanilla together until stiff peaks form.

Gently fold the softened mascarpone cheese into the whipped cream until the mixture is smooth and combined.

Dip each ladyfinger briefly into the cooled cherry syrup and arrange a layer of them in the bottom of an 8 inch square dish.

Spread half of the mascarpone cream mixture over the ladyfingers and sprinkle half of the cooked cherries on top.

Repeat the layers once more with the remaining ladyfingers, cream, and cherries.
