These chicken rice bowls are a staple in my kitchen when I need something quick but hearty. Everyone loves them because you can customize the toppings to suit exactly what you have in your fridge.

My secret to the best bowl is making sure the chicken thighs get a nice golden crust before you slice them. For an extra pop of flavor, I like to squeeze a little bit of fresh lime juice right over the top before serving.

Ingredients

  • 1 pound boneless skinless chicken thighs
  • 2 cups cooked white or brown rice
  • 1 ripe avocado
  • 2 tablespoons Greek yogurt
  • 1 lime, juiced
  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1/2 cup canned black beans, rinsed
  • 1/4 cup fresh cilantro, chopped

    In a small bowl, mix the Greek yogurt, avocado, lime juice, and garlic until smooth to create your sauce.

    Season the chicken thighs with cumin, smoked paprika, salt, and pepper.
