Easy Chicken and Rice Foil Packets
A complete meal cooked in individual foil packets that makes cleanup incredibly easy.
dailyrecipesbook.comThere is nothing quite like a meal that cooks entirely in its own little package. These chicken and rice packets are a favorite in my house because they are fuss free and keep the chicken so juicy while the rice absorbs all the savory juices from the vegetables.
I love making these on busy weeknights when I do not want to scrub a bunch of pots and pans. Just be sure to seal your foil tightly so all that delicious steam stays inside where it belongs.
Ingredients
- 1 pound chicken breast, cut into bite sized pieces
- 1 cup instant white rice
- 1 cup chicken broth
- 2 cups broccoli florets
- 1 bell pepper, chopped
- 1 small onion, diced
- 2 tablespoons olive oil
- 1 tablespoon Italian seasoning
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
Instructions

Preheat your oven to 400 degrees Fahrenheit.

Tear off four large sheets of heavy duty aluminum foil.

In a large bowl, toss the chicken pieces with the olive oil, Italian seasoning, garlic powder, salt, and pepper until well coated.

Divide the instant rice, chopped vegetables, and seasoned chicken evenly among the center of the four foil sheets.

Pour about 1/4 cup of chicken broth into each foil packet.

Bring the edges of the foil up and fold them together to create a sealed pouch, making sure there is a little room inside for steam to circulate.

Place the packets on a large baking sheet and bake for 25 to 30 minutes, or until the chicken is cooked through and the rice is tender.

Carefully open the packets to let the steam escape before serving.

You can easily swap the broccoli for asparagus or zucchini depending on what you have in the fridge. Leftovers keep well in the fridge for two days and can be reheated right in the foil or moved to a microwave safe dish. Be very careful when opening the packets because the steam inside is extremely hot.
