This stir fry is one of my favorite ways to get a quick dinner on the table during the summer months. It is light, healthy, and full of flavor thanks to a simple sauce that coats everything perfectly.

I really love how fast this comes together on a busy weeknight. Just make sure your pan is nice and hot before you add the zucchini so it stays crisp instead of getting soft or mushy.

Ingredients

  • 2 medium zucchinis, sliced into half moons
  • 1 pound chicken breast, cut into bite sized pieces
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • Salt and black pepper to taste
  • Optional toasted sesame seeds for garnish

Instructions

    Whisk together the soy sauce, honey, and sesame oil in a small bowl to make the stir fry sauce.

    Heat one tablespoon of oil in a large skillet or wok over medium high heat.

    Add the chicken pieces to the pan and season with a pinch of salt and pepper. Cook until the chicken is browned and cooked through, then remove it from the pan.

    Add the remaining tablespoon of oil to the same pan and toss in the sliced zucchini.

    Stir fry the zucchini for about 3 to 4 minutes until it is tender but still has a nice crunch.

    Add the cooked chicken back into the pan along with the sauce mixture.

    Stir everything together for another minute until the sauce thickens slightly and coats the chicken and vegetables.

    Serve warm over your favorite rice or noodles.

This dish is wonderful served over steamed white rice or brown rice. If you have leftovers, keep them in an airtight container in the fridge for up to two days and reheat them gently on the stove.
