This sandwich is one of my favorite quick meals when I want something hearty but do not feel like cooking for hours. It takes the familiar flavors of a crisp Caesar salad and puts them inside a soft, toasted roll for a perfect lunch or dinner.

The secret is using good quality bread and making sure your chicken gets nice and crunchy. It is a fantastic way to turn leftovers or a store bought rotisserie chicken into something special that the whole family will enjoy.

Ingredients

  • 4 soft sandwich rolls
  • 4 breaded chicken fillets or chicken cutlets
  • 2 cups chopped romaine lettuce
  • 1/2 cup Caesar salad dressing
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons butter
  • Salt and black pepper to taste

Instructions

    Cook the breaded chicken fillets in a pan or oven according to the package directions until they are golden brown and fully cooked through.

    While the chicken is cooking, split your sandwich rolls open and spread a little bit of butter on the cut sides.

    Toast the buttered rolls in a clean pan until they are lightly browned and warm.

    In a medium bowl, toss the chopped romaine lettuce with the Caesar dressing and the grated Parmesan cheese until well coated.

    Place a crispy chicken fillet onto the bottom half of each toasted roll.

    Top the chicken with a generous scoop of the dressed Caesar salad and close the sandwiches with the top halves of the rolls.

You can prep the lettuce mixture ahead of time, but wait to toss it with the dressing until right before serving so it stays nice and crunchy. These are great for picnics, or you can serve them with a side of extra dressing for dipping.
