Since you do not have to roll any tortillas, this recipe saves a lot of time in the kitchen. For the best results, make sure you shred your chicken while it is still warm so it soaks up all that delicious sauce.

Ingredients

  • 3 cups cooked shredded chicken
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can red enchilada sauce
  • 1 can diced green chiles
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 10 corn tortillas, cut into strips
  • 2 cups shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • Optional toppings like sour cream or sliced avocado

Instructions

    Preheat your oven to 375 degrees Fahrenheit and lightly grease a 9 by 13 inch baking dish.
