These chicken fajita bowls are a staple in my kitchen because they are so quick to put together on a busy weeknight. Everyone loves how fresh and vibrant the flavors are, especially with that tangy hint of cilantro and lime in the rice.

My top tip is to slice your bell peppers and onions into thin, uniform strips so they soften at the same rate in the air fryer. If you want a little extra heat, feel free to add a pinch of chili flakes to your chicken seasoning.

Ingredients

  • 1 pound chicken breast, cut into thin strips
  • 2 bell peppers, sliced into strips
  • 1 large yellow onion, sliced into strips
  • 2 tablespoons olive oil
  • 1 tablespoon fajita seasoning
  • 2 cups cooked white rice
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream

Instructions

    Toss the sliced chicken, bell peppers, and onion in a bowl with olive oil and the fajita seasoning until everything is well coated.

    Arrange the chicken and vegetable mixture in your air fryer basket in an even layer.

    Cook at 380 degrees Fahrenheit for 12 to 15 minutes, shaking the basket halfway through, until the chicken is cooked through and the vegetables are tender.

    While the chicken cooks, stir the fresh cilantro and lime juice into your warm cooked rice.

    Divide the cilantro lime rice into bowls and top each serving with the cooked chicken and pepper mixture.
