There is something so satisfying about the crunch of fresh lettuce paired with a savory, flavorful chicken filling. My family loves these because they are light enough to leave you feeling good, but hearty enough to keep everyone satisfied at the dinner table.

For the best results, make sure you wash and dry your lettuce leaves well before you start cooking. I like to keep the leaves in the fridge until the very last second so they stay extra cold and crisp for serving.

Ingredients

  • 1 pound ground chicken
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1/2 cup hoisin sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1/4 cup chopped peanuts
  • 1 head butter lettuce or iceberg lettuce, leaves separated

Instructions

    Heat the olive oil in a large skillet over medium heat.

    Add the ground chicken to the pan and cook until it is browned and cooked through, breaking it up with a spoon as you go.

    Stir in the diced onion, garlic, and ginger. Cook for about 3 minutes until the onion is soft.

    Pour in the hoisin sauce, soy sauce, and rice vinegar. Stir everything together until the chicken is well coated and heated through.

If you have leftovers, store the chicken mixture and the lettuce leaves in separate containers in the fridge. The chicken will stay good for up to three days, and you can just reheat it before assembling your fresh wraps.
