There is something so satisfying about a hearty sandwich after a busy day. This chicken version of a Philly cheesesteak is a favorite in our house because it is fast to put together and tastes just like the kind you would get at a local deli.

My best tip is to slice the chicken as thinly as you possibly can. If you put your chicken breast in the freezer for about twenty minutes before cutting, it becomes much easier to get those nice, thin slices that cook up evenly.

Ingredients

  • 2 large chicken breasts, thinly sliced
  • 1 tablespoon olive oil
  • 1 large onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 2 cups sliced mushrooms
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 4 slices provolone cheese
  • 4 hoagie rolls

Instructions

    Heat the olive oil in a large skillet over medium high heat.

    Add the onion, bell pepper, and mushrooms to the pan. Sauté them until they are soft and lightly browned, then remove them from the pan and set aside.

    Add the chicken slices to the same skillet. Season with garlic powder, salt, and pepper.

    Cook the chicken until it is golden brown and cooked through.

    Return the cooked vegetables to the pan with the chicken and stir everything together.

    Divide the chicken and vegetable mixture into four piles in the pan.

    Place a slice of provolone cheese over each pile and let it melt completely.

    Use a spatula to lift each cheesy pile into a toasted hoagie roll and serve immediately.

💡 Tips

These sandwiches taste best when served right away while the cheese is nice and gooey. If you have leftovers, keep the meat and veggie mix in an airtight container in the fridge and toast a fresh roll when you are ready to eat again.
