If you are looking for a dinner that practically cooks itself, this chicken taco chili is going to be your new best friend. It is a favorite in my house because it relies mostly on pantry staples, which means you can pull it together even on your busiest days.

My top tip for this recipe is to keep a few cans of diced green chiles in your cupboard. They add a tiny bit of heat and a great punch of flavor that really makes the chili taste like it simmered on the stove for hours.

Ingredients

  • 2 cans of black beans, drained and rinsed
  • 2 cans of pinto beans, drained and rinsed
  • 1 can of diced tomatoes with green chiles
  • 1 can of corn, drained
  • 1 packet of taco seasoning
  • 1 tablespoon chili powder
  • 1 cup of chicken broth
  • 2 cups of cooked shredded chicken
  • Optional toppings: shredded cheese, sour cream, and fresh cilantro

Instructions

    Add the black beans, pinto beans, diced tomatoes, corn, taco seasoning, chili powder, and chicken broth to a large pot.

    Stir the ingredients together until well combined.

    Add the shredded chicken to the pot and stir again.
