Easy Chocolate Peanut Butter Pie

My top tip for this recipe is to make sure your cream cheese is completely softened before you start mixing. It makes the filling much smoother and prevents any annoying lumps from forming in your peanut butter layer.
Ingredients
- 24 Oreo cookies, crushed
- 6 tablespoons unsalted butter, melted
- 8 ounces cream cheese, softened
- 1 cup creamy peanut butter
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1/2 cup semi sweet chocolate chips
- 1/4 cup heavy whipping cream for the topping
Instructions

Mix the crushed Oreo cookies with the melted butter in a small bowl until it feels like wet sand.

Press the cookie mixture firmly into the bottom and up the sides of a nine inch pie dish.

Place the crust in the freezer to set while you prepare the filling.

In a large bowl, beat the cream cheese and peanut butter together until the mixture is smooth and creamy.

Add the powdered sugar and vanilla extract to the peanut butter mixture and beat until well combined.

In a separate bowl, whip the one cup of heavy cream until stiff peaks form.

Gently fold the whipped cream into the peanut butter mixture until no white streaks remain.

Spread the peanut butter filling evenly over the chilled crust.

Place the chocolate chips and the remaining quarter cup of heavy cream in a small microwave safe bowl.

Heat the chocolate mixture in thirty second intervals, stirring in between, until it is completely smooth and melted.

Drizzle the chocolate over the top of the pie and refrigerate for at least four hours before slicing.

Store any leftovers in the refrigerator covered with plastic wrap for up to three days. You can also freeze this pie for up to two weeks if you want to make it ahead of time.
