There is nothing better than coming home to a meal that is already cooked and ready to go. These chicken fajitas have become a staple in my house because they take almost no effort to put together on a busy weeknight.

My favorite thing about this dish is how the peppers and onions get so soft and flavorful while simmering with the chicken. Just make sure to slice your vegetables into thick strips so they hold their shape during the long cook time.

Ingredients

  • 1.5 pounds boneless skinless chicken breasts
  • 3 bell peppers, sliced into strips
  • 1 large yellow onion, sliced into strips
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup salsa
  • Flour tortillas for serving
  • Optional toppings like sour cream, lime wedges, and cilantro

Instructions

    Place the chicken breasts at the bottom of your crockpot.

    Add the sliced bell peppers and onions on top of the chicken.

    In a small bowl, mix the chili powder, cumin, garlic powder, salt, and pepper together.

    Sprinkle the spice mixture evenly over the chicken and vegetables.

    Drizzle the olive oil and pour the salsa over everything.

    Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours.

    Once cooked, remove the chicken and shred it with two forks before returning it to the pot to mix with the vegetables.

Store any leftovers in an airtight container in the fridge for up to three days. These fajitas also taste great served over a bed of cilantro lime rice if you want to skip the tortillas.
