There is something so satisfying about opening up your own steaming hot foil packet at dinner time. These ramen noodle packs are perfect for busy weeknights because they use quick ingredients and require almost no cleanup once you finish eating.

My favorite thing about this dish is how the savory sauce soaks right into the noodles while they cook. Make sure you chop your vegetables into thin, uniform slices so they all get tender at the same time.

Ingredients

  • 2 packages instant ramen noodles, discard flavor packets
  • 12 ounces smoked sausage, sliced into rounds
  • 1 cup broccoli florets
  • 1 bell pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon brown sugar
  • 1 teaspoon garlic, minced
  • 1 tablespoon water

Instructions

    Preheat your oven to 400 degrees Fahrenheit.

    In a small bowl, whisk together the soy sauce, sesame oil, brown sugar, garlic, and water to make your stir fry sauce.

    Cut four large pieces of aluminum foil.

    Divide the dry ramen noodles, sliced sausage, broccoli, bell pepper, and onion equally between the four pieces of foil.

    Drizzle the sauce evenly over the ingredients in each foil sheet.

    Fold the edges of the foil upward and inward to create a sealed packet so the steam stays inside while cooking.

    Place the packets on a baking sheet and bake for 15 to 20 minutes until the vegetables are tender and the noodles are cooked through.

You can easily swap the sausage for cooked shrimp or tofu if you prefer something different. If you have leftovers, keep them in the fridge in an airtight container for up to two days and reheat them in the microwave.
