We all have those mornings where there is simply no time to cook. I used to rely on drive thru coffee shops, but I found that making my own burritos at home saves money and keeps me full until lunch. These are a total lifesaver during the work week.

To make your mornings even smoother, I recommend wrapping each burrito in foil before freezing them. You can easily microwave them or pop them in the oven right from the freezer when you are ready to head out the door.

Ingredients

  • 6 large flour tortillas
  • 6 large eggs
  • 1 cup shredded cheddar cheese
  • 1 cup cooked breakfast sausage or crumbled bacon
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • Salt and black pepper to taste
  • 1 tablespoon butter or oil

Instructions

    Heat your butter or oil in a large skillet over medium heat.

    Add the diced onions and bell peppers to the pan and cook until they soften, about 5 minutes.

    Whisk the eggs in a bowl with a pinch of salt and pepper, then pour them into the skillet with the vegetables.

    Scramble the eggs gently until they are just set, then stir in your cooked sausage or bacon.

    Lay out the tortillas and spoon a portion of the egg mixture into the center of each one.

    Top each portion with a generous sprinkle of shredded cheese.

    Fold in the sides of the tortillas and roll them up tightly.

    Wrap each burrito in foil or parchment paper and store them in the freezer for up to one month.

To reheat, remove the foil and wrap the burrito in a paper towel. Microwave on high for about 90 seconds until heated through. You can also bake them in a 350 degree oven for 20 minutes if you prefer a crispier tortilla.
