There is something so comforting about a toasted roll packed with tender roast beef and gooey melted cheese. This recipe is a lifesaver on days when I am rushing to get dinner on the table because it takes barely any time to pull together.

My best tip is to use a high quality deli roast beef and a flavorful beef broth for the dipping sauce. If you want to make it even more special, add some caramelized onions or a swipe of horseradish mayo to the buns before you toast them.

Ingredients

  • 4 hoagie rolls or French rolls
  • 1 pound thinly sliced deli roast beef
  • 4 slices provolone or swiss cheese
  • 2 tablespoons butter, softened
  • 2 cups beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 clove garlic, minced

Instructions

  1. 1

Preheat your oven broiler to high.

  2. 2

Slice the rolls open and spread the softened butter on the insides.

  3. 3

Place the buttered rolls on a baking sheet and toast them under the broiler for about one or two minutes until they are golden brown.

  4. 4

In a small saucepan, combine the beef broth, Worcestershire sauce, and minced garlic over medium heat until it starts to simmer.

  5. 5

Add the roast beef slices to the simmering broth for about thirty seconds just to warm the meat through without overcooking it.

  6. 6

Remove the rolls from the oven and pile the warm roast beef onto the bottom halves of the buns.

  7. 7

Top each sandwich with a slice of cheese and place them back under the broiler for one minute until the cheese is melted and bubbly.

  8. 8

Ladle the warm broth into small bowls for dipping and serve your sandwiches immediately.

๐Ÿ’ก Tips

Serve these with a side of crispy potato chips or a fresh green salad to balance the meal. If you have leftovers, keep the beef and broth in the fridge, but store the rolls separately to keep them from getting soggy.
