My favorite way to serve these is with a big scoop of tzatziki on top. If you have extra time, you can prep the cucumbers and tomatoes earlier in the day to make assembly go even faster at dinner time.

Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked rice or quinoa
  • 1 cup diced cucumbers
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese
  • 1/2 cup tzatziki sauce
  • 1/4 cup sliced kalamata olives

Instructions
