These Greek chicken bowls have become a staple in my house because they are so fast to pull together. The combination of juicy, seasoned chicken with crisp vegetables and a cool sauce is always a hit with the family.

My best tip for this recipe is to prep your chopped veggies while the chicken is in the oven. It saves you so much time and keeps the kitchen tidy while you wait for the main protein to finish cooking.

Ingredients

  • 1 pound chicken breast, cut into bite sized pieces
  • 2 tablespoons olive oil
  • 1 tablespoon dried oregano
  • 2 cloves garlic, minced
  • 1 teaspoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup feta cheese crumbles
  • 1/4 cup tzatziki sauce

Instructions

    Preheat your oven to 400 degrees Fahrenheit.

    In a mixing bowl, toss the chicken pieces with olive oil, oregano, minced garlic, lemon juice, salt, and pepper until well coated.
