This Greek chicken marinade is my go to recipe when I want something fresh and flavorful without spending hours in the kitchen. The combination of lemon, garlic, and dried oregano brings such a bright taste to the meat. It works perfectly whether you are grilling outdoors or just using a pan on your stove.

My top tip is to let the chicken sit in the marinade for at least two hours if you have the time. This helps the flavors sink deep into the meat, ensuring that every bite stays tender and moist while it cooks.

Ingredients

  • 1/3 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1.5 pounds chicken breast or thighs

Instructions

  1. 1

Whisk the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper together in a small bowl.

  2. 2

Place the chicken in a large resealable plastic bag or a shallow glass dish.

  3. 3

Pour the marinade over the chicken, making sure each piece is well coated.

  4. 4

Seal the bag or cover the dish, then place it in the refrigerator for at least 30 minutes, or up to 8 hours for better flavor.

  5. 5

Remove the chicken from the marinade and grill, bake, or pan sear until it is cooked through and reaches an internal temperature of 165 degrees.

๐Ÿ’ก Tips

Serve this chicken alongside a crisp cucumber salad and warm pita bread for a complete meal. If you have leftovers, keep them in an airtight container in the fridge for up to three days. It tastes delicious cold on top of a fresh salad the next day.
